Seamus Sam, Head Chef 

You are sure to hear Seamus before you see him due to his infectious, roaring laughter that keeps the spirit of the team high whilst working in Muse’s intimate space and busy environment during prep days. 

After joining the Tom Aikens restaurant team in Chelsea as demi Chef de Partie in 2012, Seamus was soon promoted to senior Chef de Partie. He later moved on to The Clove Club and then to the Restaurant Story team, where he stayed until he moved to re-join forces with Tom once again, but this time at Muse as head chef.

 

Kim Fung, General Manager 

Kim brings a wealth of experience spanning 25 years in the industry, with a career taking him to the likes of Florida, Copenhagen and finally London, where he was GM at Elodie, having also worked at Trishna, Gymkhana and City Social. His approach to hospitality we trust will ensure that we continue to deliver and build on the intimate and tailored experience that we strive to achieve here at Muse.
 
Elisa also joins us with an impressive background in wine and hospitality. Originally from the coast of Tuscany, Elisa’s passion for wine was ignited growing up on her family’s vineyard. Her career ties in beautifully with Tom’s experience, being both a protégée of Pierre Koffman and having worked at L’Atelier Robuchon! We are thrilled to have her on board.

 

Arletta Mala, Head Sommelier 

Arletta comes from Debica, a small town in Southeast Poland. Joining the hospitality sector in 2012, Arletta soon found a passion for wine and began to study, completing her WSET Level 2 and 3 after joining Chez Bruce in 2014. In 2018 Arletta moved to The Glasshouse where she held the position of Head Sommelier until the restaurant sadly closed in September 2022. Arletta joined the Muse team in October 2022, and is currently working towards her WSET Level 4 Diploma.
